  14. 1/2 can water rinse out tomato sauce can
  15. 14 1/2 ounces diced tomatoes
  16. 2 teaspoons olive oil for sauteeing onion and spices
  17. 1 onion diced small
  18. 1 tablespoon minced garlic
  19. 1 1/2 tablespoons ground cumin
  20. 1 1/2 tablespoons dried oregano
  21. 1 1/2 tablespoons chile powder ground
  22. chile powder or more, use New Mexico, if you can find it
  23. 1/2 tablespoon ancho chile powder optional but very good
  24. 1/2 teaspoon cayenne pepper or more, to taste
  25. 1 tablespoon dried parsley
  26. 2 teaspoons epazote optional but recommended
  27. 8 ounces white mushrooms cut in quarters, or more
  28. 6 ounces black olives drained and cut in half lengthwise
  29. salt /pepper to taste
  30. 1/2 cup chopped cilantro optional plus additional cilantro or parsley to garnish, or use sliced green onion if desired if youu2019re not a cilantro fan
